One of our most traditional goat’s milk cheeses, Crottin de Maitre Seguin (Master Seguin’s Crottin) is one of the staple cheese-platter selections. Very similar to Crottin de Chavignol and Chabichou or Chabis, it is a delicate and sweet, with a soft, even texture – the cheese is uncooked and unpressed. The flavor is pungent, but not overpowering. Traditionally paired with a not-to-sweet but fruity white wine like a Sancerre.
